We use a tool from Symtrax for this (XL400 - although they have replaced it with Starquery now), but you could do either of these:

Edit the data transfer select option to read "ORDNO as Order_Number" for example

Use VBA to extract directly from iSeries, I have used this quite successfully, modifying code found here: http://itknowledgeexchange.techtarget.com/beyond-excel/say-goodbye-to-querytables/
You can, for example, enter a couple of dates in an excel spreadsheet, click a button and return all sales between these two dates. This effectively does the same as the Symtrax offering but without having to buy any software. It allows you to pass variables from your excel spreadsheet into the SQL statement for extracting.

Perhaps ORDER NUMBER.

I want to automate this and not go into Excel to adjust column heading each time this transfer is run.
