I'm not sure about the 7.8 client, but in 7.7 I believe the total memory used by the client is defined at launch in the jnlp file. Each instance of the client can consume that much memory, but I don't believe most people will use more then one instance of the application at a time.
In short, if you want to buy PCs with more memory so that you can run big complicated PowerLink sessions, you need to edit your jnlp file and bump up the memory allocated to the jvm at launch.

Get a PC and System I, with a ton of memory and processor speed.
You can't have enough! I had to bump up all of my client PC's to at least 4 Gig of RAM.
And I have gone Gigabit for the network connection.
