You might have to translate the different terminology for the versions.

As far as the heap size goes, nothing jumped out at me in the
documentation. Some additional searches are saying newer versions of Java
8 are adopting Java 11's feelings on this.

We have a customer running Tomcat 8.5 under Java 8 (64-bit) on a V7R3
box. In a WRKJVMJOB, JDK comes up 1.8.0_151; on the Tomcat Manager page,
it comes up 8.0.5.5 - pap6480sr5fp5-20171114_01(SR5 FP5).

By comparison, our own new cloud V7R5 box shows 1.8.0_331 and 8.0.7.10 -
pap6480sr7fp10-20220505_01(SR7 FP10), respectively.

Also, the customer of which I speak has the Tomcat JVM running with heap
parameters -Xms 4096 and -Xmx 5120. Does anybody know if we can go
bigger with either of these JVMs?
