I am using FOP to generate PDF from Java.

It is an open source product from the Apache foundation.

http://xml.apache.org

The principle is:

- represent your data into an XML document
- use XSL-FO to describe the transformation of the XML information into a
PDF doc
- use FOP to process the XSL-FO and to generate the pdf

XSL-FO is a standard of the w3c to describe documents in pdf (include
description
of the pages, format of the pages, numbering, ...).
FOP is a java implementation of this standard.

The really good thing eith it is that you describe your document in XML and
use XSL to represent it in whatever you want (html, wml, pdf). In this case
you use XSL-FO for the pdf. You can really do very complicated
representations
it is really powerfull. You just need some time to learn FO correctly.
