Perhaps by that they mean that your Domino 8 server can talk to a 7.0.3
server which runs sametime 7.5.1?
This link doesn't have the Sametime 8 that was alluded to.

Re: Domino v8.0 & Sametime on i5/OS
Compatibility guide can be found here:
http://www-03.ibm.com/servers/eserver/iseries/domino/domino6/pdf/releasesupport.pdf
It seems a little contradictory in that it states 7.5 & 7.5.1 are not
supported on 8.0 but that "Sametime 7.5.1 supports interoperability with
Notes/Domino 8"

Domino v8.0 & Sametime on i5/OS
Hello All,
Currently I'm working on a project to integrate 3Com's VoIP solution
(running on an Linux LPAR on the System i) with Lotus Sametime.
I downloaded the i5/OS versions of Domino v8.0 & Sametime v7.5.1 from
IBM's
trial area.
Domino v8.0 installed without an issue except for the fact that the Domino
Plug-in for i-Navigator was not placed on the system for updating my
i-Navigator.
When I started my Sametime install, I received an error about Domino v7.0
not being installed and the installation halted. My guess is that the
version of Sametime is not aware of Domino v8.0.
Has anyone installed Sametime v7.5.1 with Domino v8.0 and if so, how was
this feat accomplished.
Also, is the i-Navigator plug-in for Domino distributed with v8.0 or do
they
expect you to use Domino 8 Administrator and CL commands to administer the
server?
Kindest Regards,
Rob Binetti
