We do a checkbox or radio buttons (depending upon who does the design - some designers like to misuse UI widgets) and record that it was checked, the user name, date, and IP address.

i realize this is a bit of wild goose chase. I told the user we don't have
control of a webcam to record them click on the "I Accept" .
I told them I would research the "standard practices".

Along those lines-- our purchase orders have terms and conditions
that a company 'agrees' to when we buy something from them.
Likewise, our sales order forms have terms and conditions that the
buyer 'agrees' to when placing an order.

Due to the conflicting terms, it turns out that we could not send a
purchase order to ourselves and buy our own material!

The result would be that the lawyers for the buyers and the sellers
would have to duke it out.
