I've been programming subfiles for a long time and have never discovered an
easy way around this.  Perhaps someone else on the list has had success and
will share.  Failing that, try the following: 

Define one field as 10A B with CHGINPDFT and an indicator for DSPATR(PR) and
DSPATR(UL).  When you want to display "TOTAL:", activate the indicator for
DSPATR(PR) and populate the field with that value. 

When you want the date field to be entered, it gets trickier.  You'll need a
procedure to edit the character field to ensure the entry of numeric
characters in succession with no other characters except blanks.  You can
then use TEST(D) to determine if the entered values are a date.
%CHAR(%DATE(<extracted numeric values>:*ISO):*ISO) can be used to populate
the screen field with the formatted version of the entered values.

I have a subfile record where I'd like to display a character field with the
value 'TOTAL: ' or an input/output field for date depending on the type of
record it is.  If it is a Total record, then I want the char field 
to display (it's 10 long), if not I want the 8 signed date field with edit
word ('    /  /  ') making it 10 long.  Here's the catch, I want to have
both in the same starting position.
