To get from vista home edition, to win 7 professional there's not a direct
path that I know of.

Do a custom install. That's the best way to do it anyway. No need to
do anything special - just select custom install.

Or, do an inplace upgrade to Home Premium without a key, then do an
anytime upgrade to Professional using your normal key.

So I'm opting to go to vista Ultimate to get the remote desktop, which is
what I'm really after. ÂOnce there, I'm thinking I can go to win 7 pro
anytime I'm ready.

No, you can't downgrade the edition.

Is there is a difference in the package I need if loading to a laptop as
opposed to a desktop computer?

No.
