Me too. I work with a client who runs production on a P8 single core
(second core was disabled during purchasing to save on IBMi licences). It
runs about 10-20% cpu during the day for about 50 users and only gets up to
100% during nightly batch.

This might be a way to avoid upgrading the box for 7.5 (DR is on a P9) and
both use SANs.

We do. We have two power 8's that are single core and we use less than
10% CPU. They are dedicated to customer transaction processing. They are
located in CA and TX.

Then we have our main IBM i at corp that runs all the back office stuff.
It is also a single core power 9 system. Finally in the TX location is
another power 9 that is the mirror of the corp one.

All 4 are only single core systems. Well they have more than one core but
IBMi is only licensed for 1 core. And they run circles around our multi
server / multi core / dual CPU SQL and IIS server that run other
applications.
