You want the "fixed font" option.

No, I like that the font resizes when I make the window larger.  I just want it to get wider when I switch from 24x80 to 27x132.

Incidentally, neither of the behaviors you describe (fixed window size
with variable font size, or fixed font size with variable window size)
is what I would call "5250-specific". If anything, I associate "5250"
with old dumb terminals. Those had a fixed screen size and a very
narrow font in 132-column mode; so to me, that is the "original"
behavior.

I wasn't striving for technical accuracy with the term.  I consider anything that has to do with the fixed settings of 24x80 or 27x132 to be "5250-specific".  And even that's not particularly accurate because 27x132 is the 3270 family.  So I guess I don't get my "historical accuracy in technical terminology" merit badge.  :)
