I think Rob's assessment mirrors the general sentiment of the group. There have been a few train wrecks with 7.3, but the law of averages is on your side.

The first considerations is to check with your vendors and ensure they are ready for 7.3. If not, replace them with vendors who aren't just milking you.
Then ensure that your current system supports 7.3.
If you pass those then definitely go to 7.3. It's been out long enough that it's already had a few cumes and new TR's so it's not still wet behind the ears.
The big thing is that, well, you're on 7.1. This indicates to me that it takes a major act to get your company to upgrade. So why be stuck on 7.2 for years? If you're upgrading you might as well go as far as you can go.
