We strongly recommend NFS over QNTC for our customers and have many who are running it with no problems. We have a few articles on our wiki that help in the setup. There is mention of our products, but not that you need worry. Microsoft distribute a free server to run on Windows. There were posts recently from my boss, Richard Schoen, that included the parameters that we use for the MOUNT command - no secrets there.

The wiki is at http://support.rjssoftware.com - search for NFS in the search box on the left.

Any questions, give me a holler at 888.rjs.soft - I just got this working for a customer in the last couple weeks and might even remember what we did!!

Some people are pretty fond of using NFS shares instead of QNTC. I dabbled in it a little to try to address some QNTC issues but we running into so many hassles that I started wondering if it was any better and gave up. Then again, I'm getting dragged this way and that.
