We use (and I recommend) DataThread for exactly this sort of thing.
It is relatively easy to use, can use existing journals, it's own
journal, or triggers, and can be setup to do things like send out
emails (or even run programs) if a particular field is changed.

When Stitch-in-Time is asked to observe a database, the product saves the
image of the record just before a change and what the record looks like after the
change. Also saved: who did it, precisely when that happened, and what tool was used to
execute the change.
