By default, CPYTOSTMF will convert data to ASCII CCSID, which it thinks
is associated with your current EBCDIC CCSID (taken from CCSID value of
the job).
You can find what it is by looking at DSPLNK output. It will show what
CCSID was used for IFS file.

When using CPYTOSTMF you can choose to convert using CCSID value, using
translation table, or not to convert at all.
CCSID value for different languages are listed either in "International
applications development" or "National Language Support" guides.

Translation table gives the most flexibility, but it requires good
understanding of what you are doing.
