I'm not sure, but the SPA (Software Publishers Association) might have
sample email policies available. The book 'Online Law'  I mentioned a few
days ago covers some of the legal aspects with email as well.
I think their web site is http://www.spa.org, but I'm not sure.  

IMO, it's a good idea to have a corporate email policy in place (make
emplyees read and sign it) that allows management the right to read email.
This is a good policy to cover when someone is unexpectedly out.   And one
of the best rules of thumbs I've heard was to tell employees not to send
anything in their email that they wouldn't be willing to pin up on the
company bulletin board with their name on it.

Even the well-meaning employees could accidently broadcast info that wasn't
meant to be read by the recipient(s).  I know I'm not the only one who has
ever sent  email to the wrong place.  Or to a list instead of an
individual.   Ever hit 'reply' on a message and realize there is more than
one recipient?  Yes...you may well want to have specific policy 
restrictions on what types of things shouldn't be sent at all, or
precautions on how to avoid 'oops, I sent it to *who*?' incidents.
