While there isn't a CVS server AFAIK, there is a Subversion server original ported by Softlanding.

My understanding is that CVS is pretty dated, most prefer a more modern derivative such as Subversion.
CVS is to version control systems as FAT is to file systems, i.e. it is usually supported in each and every client and usually quite well, even though it has some shortcomings.

Depending on the skills inhouse of the original poster, it might be easier to install a vmware virtual appliance on a PC (Windows or Linux) which is already set up instead of getting it all working on the i.
