I too am missing this option.  No listing under preferences for LPEX
Editors.  I am also on the 5.1.0.1 version of WDSC.  I have also
experienced the work bench error that basically required you to have to
go out and delete or rename the workspace directory and then re-open and
re-create the all of the filters, connections, etc.  I thought it was
something I was doing wrong, but it has happened at least 3 times so
far.  From what I can tell, I have not lost any source, but this is a
very painful process to have to go through.  Any idea as to what might
be causing this to happen?

Bruce, do you have a subsection under Window->Preferences for "LPEX
Editors"?  This is the one that got wiped out of my workbench, and you
also seem to be missing it.
