Two questions:

1) Where would I have found this info?

Nowhere. This is your typical case of development running ahead of documentation...

2) Can I make this a permanent setting? Or maybe it is permanent?

The moment you used the "default" parameter (set default.print.header ..), it is permanent. Without the "default.", it would only work for the curent view.
