I need to edit some character fields - simply edits similar to what would be needed for a date.

My brain tells me there are functions to do this but edit words and codes only apply to numerics and even among the MI functions they are all numeric.

Am I mismembering? or do I really have to do it the hard way? Seems such a trivial requirement which is why I’m convinced I’m missing something.

I'm pretty sure what you describe is not an RPG built-in. In fact, I
can't think of any language that includes an "edit word for strings"
facility. (I would be delighted if someone pointed out a language that
does, though.)

The closest I can think of would be the templating/interpolation
feature in many languages, though that's generally for injecting
separate values into a template, rather than chopping up a single
value into a desired template.
