I use POI to create a workbook from scratch with one sheet.
Then I open it and I add another sheet. And so on.
Each sheet has his own number of columns, formatting, header, etc.

Actually I didn't find the caveats you are seeing.

This works fine using POI classes both with RPG and pure Java.

The only serious problem that - in my opinion - makes pure Java much better
than mixed RPG+Java is that RPG is good only for small xls (say 1,000 rows)
and useless mof medium-big sheets. Furthermore when you start the JVM from
RPG the threaded jobs remains on until you sign off. You can terminate the
Jvm but at 5.3 you can't restart it anymore.
