High-level version comparison:

If you plan to install Access, only Pro & higher versions of Windows 7 are
supported:

Beyond that, unless there's something additionally odd about running Windows
on the Mac I see no reason to start with Home Premium and do an Anytime
Upgrade to Pro if needed.

I need to buy a copy of WIndows 7 which will be used in a virtual machine
on a Mac. Only real reason for using Windows at all is RDP.

MS seem to have made 7 even more confusing than XP was in terms of
choices - there Pro was an easy choice - but there are so many options with
7 that I'm just confused.

Any suggestions? The cheaper the option I can get away with the better in
many ways as WIndows will only be used when the software needed is not
available for native Mac.
You will not join a domain and you do not need Remote Desktop server.
Any other reason left you cannot just go with the cheapest?
