You don't get a choice. IPCop runs on it's own version of Linux.
The current version is based over a very striped down Red Hat 8 I
believe. And I they are going to move to LFS (Linux from Scratch)
in the future.

Bottom line is that for most IPCop users, the exact underlying OS
doesn't really matter.  And it is supposed to be a dedicated
machine.  You do NOT want to run your mail server or "other"
things on the IPCop machine.
