Thanks for all the options. David's solution worked fine for me.

Now, does anyone know if there's a way that when you start a new session
from a different server it will automatically make it a new window instead
of a tab in an existing window (that's on a different session)?

There is a text file with the extension of .BCTX that you load in all your
5250 sessions you want to start up at one time. You can easily set up one
of these when all your sessions are open by going into any one of the
sessions menu File -> Save As Multiple Sessions... and then give it a name.

You need to ensure that the .BCTX is associated with ACS if you plan on
opening with a short cut or double clicking, open the main ACS product go
to Tools -> File Associations... then tick on the .BCTX item. You can
only perform this last step by running the windows executable of the ACS
product. Just running the .JAR file will not allow you to update file
associations.
Or you can just create a short cut to the base product and then pass it
the .BCTX file name and it will open just the same.
