I had this issue when I upgraded from V6R1 to V7R1, and Classic Java was no longer supported.
I was never able to find a list.
I found each app had their own rules, including IBM's LPP.

1)) Some used system env var.
2) Some used job env var.
3) Some were hardcoded, - 5722IP1 V5R3M0 IBM Infoprint Server for iSeries (skip shipped - I believe the V5R3 version is still the latest) JDK version was fixed with PTFs.
4) Some retrieve the current OS and changed JDK accordingly - Curbstone Card

hard.
