Our backbone is only 1gb, not capable of using the 10g ports, so we could only use the 1gb ports.
Am I correct that each 1gb port will allow 4 logical ports, so 8 logical 1gb ports max.

Logical ports per adapter - This column provides the total logical ports per adapter followed by the number of logical ports available for each physical port.

Two ports on the EN17 are copper Gig-E ports so yes.

The others are fiber 10g ports.

Correct 5899 is traditional quad port Gig-E adapter and it gets assigned in it's entirety to a single partition.

You'd probably want the #EN17 which has two GbE copper and two 10GbE Fiber connections. Each port can be share with up to 16 partitions.

The other option is the EN15 which has four 10GbE Fiber ports.

Note that you must have an HMC and it's minimum code level is 7.7.9. Of course if you have POWER8 servers then minimum is Version 8.

You would have more than one for the same reasons as always, card failure, slot failure, finger check (pulled wrong cable), or the switch on the other end fails etc.

Either is valid, your call. If you are purchasing new Ethernet then get an adapter that is SR-IOV capable, if you already have adapters such as FC #5899 and don't want to add more then use the bridge.
