You can give info like that any time by e-mailing COMMON, filling out the conference evaluation, speaking up at Meeting of the Members, or just letting someone on the education team know. (I'm one member of the team -- but there are many others.)

Honestly, it's pretty unusual that people just volunteer ideas like that. So, at the conferences, I also try to talk to attendees and ask them if there are things they'd like to see. (You have to "prod" them a bit, haha... Though, I find most people are pretty happy with what we're providing.)

This was a big part of the impetus for the "open source languages" conference we're having in December -- I heard from several people that they wanted more coverage of Node.js and Ruby (we are also covering Python, though I didn't get direct feedback on that) so we've put together a whole event for that. And we are also adding some additional Security sessions at the Annual conference in Spring because of another convo I had with an attendee.

Maybe what would be more interesting would be to find out from people who DON'T come to the conference... what new session would make them come? But not sure how to get that sort of feedback.
