It is important you read ALL three of these following:

V5R4 Memo to users:
http://publib.boulder.ibm.com/infocenter/iseries/v5r4/topic/rzaq9/rzaq9.pdf

6.1 Memo to users:
http://pic.dhe.ibm.com/infocenter/iseries/v6r1m0/topic/rzaq9/rzaq9.pdf

7.1 memo to users:
http://pic.dhe.ibm.com/infocenter/iseries/v7r1m0/topic/rzaq9/rzaq9.pdf

Do NOT skip one.

Things have changed. You may have to change some programs or your method
of doing things. Like, ANYNET, etc. And, of course, CPYxxxIMPF.

Going to 6.1 and 7.1 will involve things like ANZOBJCVN. Which, I don't
know if it's supported on V5R3. READ UP ON ANZOBJCVN!!!! Critical!!!
There are ways to glean the information that ANZOBJCVN will show you if it
isn't supported on your current release. I wrote some techniques on it
awhile back. Somewhere.
Read the IBM Redpaper publication i5/OS Program Conversion: Getting ready
for i5/OS V6R1,
REDP-4293, which you can obtain from the following Web site:
http://www.redbooks.ibm.com
The Redpaper also includes the PTF numbers to use for loading the
ANZOBJCVN command.

Now, IBM does document "unsupported" migrations. Like, your situation of
going from V5R3 on an old box to 7.1 on a new box. In fact, the first
scenario they discussed was migrating from running V5R4 on a system so old
that it does not support 7.1 to a new system with 7.1. The magic word is
"migration". Read this:
http://pic.dhe.ibm.com/infocenter/iseries/v7r1m0/topic/rzamc/rzamc1.htm
A big problem is finding a tape drive you can hook to both systems.
