I never thought about it before, but what good does it do to know
that an address belongs to the "recipient"?

OK, so "recipient" was a poor choice of words. Point is, if you're
having someone signup for something (say a web account for your
company's store) and you want to confirm that they email they enter is
actually their email then send them something in an email so you know
they got the email. This could be a code, their password, or just a link
to click so you know they received the email.

Yes, they could setup a dummy email just to get the code, but for the
most part you'll get good clean emails.
