From what I've read in the past, data is stored in columns not rows. Those
columns are probably indexed (binary tree) for performance.
Then when you want more than one column (field) projected in your statement,
they merge it at runtime.
Supposedly, performance of this type of database truly shines in DW
environments where people project only few columns at a time. If you start
merging a lot of columns, performance of course degrades.

I wouldn't worry about RDBMS. It's so engrained in our lives and
businesses, I don't see it ever going away. Remember the "object oriented"
database craze a while back? It was supposed to relegate RDBMS to pasture
also.
