Best way, so that you don't have to modify any code to turn it off/on, is 
to find out which *JOBD is used to start the job.  Then do a 
CHGJOBD JOBD(YourJobDescriptionHere) LOG(4 0 *SECLVL) LOGCLPGM(*YES)
That will log everything.  You can adjust those settings if you only want 
to see messages with a certain severity level.  If the jobd gets too 
cluttered with escape message you don't give a shiv about then I'd 
recommend looking at the following code:
 MONMSG CPF9801 EXEC(DO) /* Object does not exist */
   /* Remove message from cluttering joblog */
   RCVMSG MSGTYPE(*NEXT) MSGKEY(*TOP) RMV(*YES) KEYVAR(&KEYVAR) +
          MSGDTA(&DATA) MSGID(&MSGID)
 EndDo

There's an RPG equivalent for Monitor structures.
