Then I would NOT do the roll-your-own Linux and open source solution. 
It is certainly the least expensive, and quite likely the cheapest
over time, but only if the company can do the work themselves. 
Day-to-day running is no issue, but how is a problem resolved.

The suggestion made by someone else that it be hosted may well be the
best bet here, unless monthly cost is an issue.  There are a gazillion
email hosting services.

My company (~150 users) just changed from Novell GroupWise to MS
Exchange 2003 earlier this year.  It doesn't requite the "therapeutic
IPL" on a regular basis; but it does need regular care and feeding, on
the order of .25 FTE.  We almost went the hosted route, but the
ownership here is very sensitive to our data being available outside
the company.
