I strongly second David's suggestion. From a cost/benefit perspective you can't beat a linux mail server. You get anti-virus software to scan all the incoming and outgoing emails to protect your Windows clients (clamav), spam filtering (spamassassin), scaling from very small to amazingly large, and probably the best reliability of any email server. Oh - and it is free and easy to find knowledgeable people who have extensive experience with it.
