I think for simplicity, a telnet based application might work for you.  A
few more questions:
1.  Do you want the data capture in the fields (I assume you mean like farm
fields) to happen in real time, or do you want the data capture to only
happen locally in the device, and then some way uploaded to the AS400?
2.  What is the environment like?  Will a Palm device hold up in a harsh
environment, is there a chance units will be dropped?
3.  If real time access is desired, can the area be covered by a private,
wireless network?  You can use 802.11 or some other radio based protocol.
4.  Is the area covered by a cellular carrier.  GSM carriers can provide
GPRS or EDGE data service on a handheld and CDMA carriers can provide 1XRTT
or EVDO coverage.  Data speeds range from 25K to 500K depending on the
technology.  TN5250 data stream apps typically use very little bandwidth, so
even the lower speeds would probably be OK.  Using a public cellular
network, you would either have to open up Telnet from your AS400 to the
internet (or use SSL), and you can also use a VPN client on most Palm and
PPC handheld devices.

I mention Teklogix in my previous post.   We have installed lots of their
gear and written a lot of customs apps for our clients to use 5250 terminal
remotely.  They have handheld devices that are designed for rugged
environments, extreme temps (ie cold storage warehousing).  We have
installed both their 802.11 solutions and their narrow band radio solutions.

We are just at the point of first investigation, so hardware is not choosen
yet.

What do you mean by range? Bandwidth? I don't know what bandwidth these apps
need, but I'm sure if the concept will work, they (the
fieldworkers) will soon question for more. So transferred data amount can
grow soon.
