Michael,

 I have done many of these and they are generally NOT difficult.  THere are only
two rules to follow:

 #1 Follow the CISC to RISC Road Map

 #2 If you have the urge to digress from the Map see Rule #1.

 It really is that simple.  The #1, #2, and #3 problems with these are when
people digress from the map.  Trust me, I've had to mop up when people do it
wrong.

 The biggest hassle is getting the RISC versions of all your 3rd party software
and keys for those that will let you migrate your current version to RISC.  The
actual conversion process goes very smoothly.  You will certainly be doing a
side-by-side migration now since you must purchase a new AS/400 (upgrades from
CISC boxes went away long ago).

 An average side by side migration takes me less than 40 hours (NOT counting
planning time or time for 3rd party software to show up).  This varies quite a
bit depending on system size, tape speed, number of communication lines and
locally attached terminals.

 Realize that I AM a consultant (but am not soliciting your business :-) ) so I
have seen these done dead flat perfect as well as go completly in the tank.   
The
biggest benefit to having someone who knows the process well do it or help you
with it (assuming you have the time to do it yourself) is the small details that
won't derail the conversion but just be irritants along the way.
