We have set up a 740 with 8 IOP LPARs and so far am very pleased.  We are
planning to use it for high availability for 7 AS/400s which run manufacturing
and warehouse management applications.  We are testing the HA packages with
vendors at this time so it is not yet in production but that is anticipated for
mid-September.  The actual implementation depends heavily upon how well the
configuration planning is done and once you get a good understanding of the
concept, the actual setup is very clean.

The only uncomfortable thing so far is how you have to move tape drives, CD 
ROMs,
etc if you do not have them for each LPAR.  We have 2 Magstar 3590s, 1 - 1/4" 
and
2 CD ROMs.  It's also a little disconcerting that our application vendors have
not tested on this configuration so we're being extra conscientious with the
testing.
