For comparitive purposes, if a shop was already running it's Domino server
on a Wintel setup, would they just install BES on that same production
email server (typically), or would they still need the separate one on a
separate BES box?

You should keep a really simple configuration for the BES. The install
guide basically walks you through the entire configuration. You create a
BES Admin account placed into an administrator group and add the BES
server to LocalDomainServers. Then just make sure that they can see each
other (you shouldn't have to create a connection document) and keep the
NAB replicated between your home server and the BES.
