You're not going to like this, but at least in V6.x.x you cannot simply change 
the status of an item to (or from) lot controlled if you have stock, so 
you'll need to remove all current inventory of the items in question with 
some sort of Adjustment.  You will have to decide on a lot numbering scheme 
from among those BPCS supports, assign shelf lives to each item and perhaps 
other attributes as well, and finally Adjust each bit of inventory back into 
place, either manually assigning lot numbers or letting BPCS do so 
automatically.  If you require Quality Control as well, then there are many 
more set up decisions to be made.  You might consider getting help with this 
task since doing it incorrectly could be more costly in the long run than a 
good consultant's fees.
