While OV is dead and gone there are different options available.

Option 1 would  be to install Domino on your iSeries and use its features to
create dunning notices.
Option 2 would involve custom development, however the convert to PC
document is still available on the iSeries in V5R1.
Option 3. You could use the IFS API's and develop code to create a mail
merge file for use with a MS Word document.
